Restored 19th-century henequen hacienda in the Yucatán jungle with 40 casitas built around a private cenote — Mérida airport 40 minutes, Chichén Itzá 90 minutes.

What works

  • Private cenote spa — unique among luxury Yucatán properties
  • Jorge Vallejo's Ki'ol kitchen
  • Mayan H'men healing programme

Watch-outs

  • 40 min from Mérida — taxi-dependent
  • Mosquito pressure higher than Caribbean coast hotels

Chablé Yucatán occupies a restored 19th-century henequen hacienda in Chocholá, a small town 40 kilometres south-west of Mérida and 40 minutes by hotel transfer from Mérida International Airport. The site is the former Hacienda Chablé — a sisal-processing estate that operated through to the early 20th century — and the original chapel, machine house, and central courtyard have been restored as the property's public spaces. The Yucatán cultural access is the property's clearest differentiator versus the Caribbean-coast resorts: Uxmal is 90 minutes south, Chichén Itzá 90 minutes east, and the Ring of Cenotes is within 30 minutes drive.

The 40 casitas designed by Roberto Lascurain are the design centrepiece — single-storey, all-glass jungle-facing structures distributed via stone paths through the secondary forest that has reclaimed the hacienda's outer fields. Each casita reads as a private pavilion with floor-to-ceiling glass on three sides, a private outdoor shower, and an indoor-outdoor sleeping platform; the Casita with Plunge Pool category adds a 4-metre pool in a walled garden. The Royal Villas are two-bedroom layouts with full swimming pools and dedicated butler entrances. The mosquito pressure is the property's only design weakness — every casita is fully screened but evening exterior dining requires repellent.

Jorge Vallejo (Quintonil, Mexico City) runs the culinary programme — Ki'ol is the all-day Mexican kitchen and the breakfast venue, with a strong Yucatán-Mayan focus on cochinita pibil, recados, and the maize programme. IXi'IM is the fine-dining restaurant under chef Luis Ronzón (drawn from the Pujol kitchen team) in the restored hacienda machine house, with a tasting menu (~$140 pp) that is the property's signature dining experience. The Mayan H'men healing programme — run by traditional Mayan ceremonial practitioners — is bookable in 90-minute sessions inside the private cenote chamber; it is the only such programme operated by a luxury hotel in the Yucatán.

The Chablé Spa is built around the property's private cenote — guests can swim and snorkel in the cenote chamber daily, and the treatment rooms wrap the cenote on three sides. Standard treatment menu is supplemented by the H'men ceremonial programme and the temazcal sweat-lodge sessions led by Mayan practitioners. Chablé has no chain loyalty programme; bookings via Virtuoso or Amex Fine Hotels & Resorts add a $100 property credit, daily breakfast for two (already included), and a confirmable 16:00 late check-out. The structural low season is the Yucatán summer (June through September); the dry and cool December to April peak runs 60 percent above the shoulder, with Christmas to New Year and Easter weeks priced 60 percent above the standard peak.

Frequently asked

Chablé Yucatán or Rosewood Mayakoba?

Mayakoba for Caribbean beachfront and the larger property scale. Chablé for the Yucatán cultural-access (Chichén Itzá 90 min, Uxmal 90 min) and the private cenote spa. Different propositions — Chablé is the wellness/culture pick, Mayakoba is the beach-resort pick.

What is the private cenote programme?

The cenote (natural limestone sinkhole) at the centre of the property is the architectural and wellness centrepiece — the spa is built around it, and guests can swim, snorkel, and access the H'men healing programme inside the cenote chamber. Daily access is included on all bookings.

Is Ki'ol worth booking outside hotel stay?

Yes — Jorge Vallejo's Yucatán-Mayan menu at Ki'ol is the strongest fine-dining experience in the Mérida region and books out 2 weeks ahead at weekends. The chef's tasting at $140 pp includes the signature recados rojo and the maize-corn programme.
